Salmon with Spinach Artichoke Sauce

Ingredients
2 tablespoons Chopped, Drained Sun-Dried Tomatoes in oil, 2 tablespoons oil reserved
4 Skinless Salmon Filets (about 1 1/2 lbs)
1/2 (10.20-ounce) Package Spinach & Artichoke Dip, thawed
2 tablespoons Grated Parmesan Cheese
Directions
- In large nonstick skillet, heat reserved oil over medium-high heat; sprinkle salmon with 1/2 teaspoon kosher salt and 1/4 teaspoon pepper.
- Place salmon in skillet; cook 8 minutes or until internal temperature reaches 145°, turning once.
- In small skillet, cook and stir dip and tomatoes over medium heat 3 minutes or until heated through.
- Serve salmon topped with dip mixture sprinkled with cheese.
